This new Knife Block Set from I o Shen is one of the best Japanese style sets we have seen. It contains all the knives required to provide a very good spread of knives to cover most tasks.
The set contains five of the knives from the I O Shen range:
270mm Bread Knife, I.O.SHEN Sahm Khom Knife, I.O.SHEN 105mm Pointed Paring Knife, I.O.SHEN 210mm Chef Knife, I.O.SHEN 200mm Flexible Filleting Knife
I. O. Shen Knives combine an extremely hard layer (Rockwell 62 degrees) inside two outer layers of softer steel (Rockwell 10 degrees). This provides a super sharp edge without the danger of britleness that may be found in other high quality knives. This Triplex method of construction has made I.O.Shen knives widely acclaimed by professional chefs.
The unique Tai Tang method used on the handles of I.O. Shen knives is a key feature and provides a great dgree of stability and balance.
I.O. Shen knives may be sharpened with a whetstone, or with one of the electric knife sharpeners reccomended by the distributors of I.O. Shen Knives.
