Kai Shun Japanese Bread Knife (DM-0705)
The Kai Shun Japanese Bread Knife has a 9.0”/22.5cm blade and a 12.2cm handle and is made specifically to slice bread.
This Japanese Bread Knife has a patented scalloped edge which means from the centre of the blade, the scallops are slighlty slanted to the outside in opposing directions. This is very practical as it cuts with every move rather than tearing and reduces the amount of crumbs significantly.
This knife is made up of 32 layers of damask stainless steel which gives the unique and beautiful Damascus effect and has an inner layer of V-gold-10 steel. The steel is made up of 1.0% carbon, 1.5% cobalt and 61 ± 1 HRC, and so is exceptionally hard and highly resistant to corrosion.
All Kai Shun Japanese Knives have a ‘chestnut’ shaped handle which has been ergonomically designed to fit comfortably in your hand. The handles are made from fine laminated Pakka wood and has a full tang construction.
