Kai Shun Japanese Vegetable Knife (DM-0714)
The Kai Shun Japanese Vegetable Knife has a 3.5”/8.5cm blade with a 10.4cm handle, and is very handy for peeling and slicing fruits and vegetables and also for chopping small quantitys of herbs.
This knife is made up of 32 layers of damask stainless steel which gives the unique and beautiful Damascus effect and has an inner layer of V-gold-10 steel. The steel is made up of 1.0% carbon, 1.5% cobalt and 61 ± 1 HRC, and so is exceptionally hard and highly resistant to corrosion.
All Kai Shun Japanese Knives have a ‘chestnut’ shaped handle which has been ergonomically designed to fit comfortably in your hand. The handles are made from fine laminated Pakka wood and has a full tang construction.
