Kai Shun Pro Japanese Deba Knife (VG-0210D)
The Kai Shun Pro Deba Knife is a traditional Japanese Cleaver with a 21cm blade and a 12.2cm handle. This is a very sturdy knife and has a broad blade as the front part of the blade is often used for filleting fish, whereas the back part (which is heavier) is often used to part bones and fishbone.
This knife is made 100% from v-gold-10 steel; an extremely high quality steel which is made up of 10% carbon, 1.5% cobalt, and 61 ± 1 HRC, making it exceptionally hard and highly resistant to corrosion.
The Kai Shun Pro Japanese Deba Knife has a single-edged blade; one side is slightly concave, reducing the contact between the blade and your food, and the other side is level and has been hollow ground, allowing an air pocket to produce between the blade, and your food. This helps to reduce friction, and keeps crumbs to a minimum.
The Kai Shun Pro Japanese knives are hand made by master knife craftsmen, and not only does this knife hold its outstanding sharpness, it is also very simple to restore its sharpness by using the same angle the craftsmen used, but with a whetstone.
All of the knives in the Kai Shun Pro range have an ergonomically shaped handle so it will fit comfortably in your hand. The handles have a full tang construction and are made from fine laminated Pakka wood.
They also come with a high quality wooden cover for the blade to help protect the edge.
