This Kai Shun Kaji Scalloped Santoku knife is an Asian-type knife with broad blade and especially sharp cutting edge. The all rounder of the Asian kitchen can be used threefold: for preparing meat, fish and also vegetables. The blade is 16.5cm and the handle 12.2cm.
The word ‘Kaji’ in Japanese means ‘blacksmith’, and in Japan they are synonymous for the manufacturing of ultimately sharp Samurai swords. For centuries their perfected art of forging formed the basis for the world-wide recognition of the sword craftsmen of Seki; only the very best would be called Kaji.
These knives are one of the hardest of the Kai Shun ranges, the blades core is solid sintered SG2 with a hardness factor of 64±1 HRC and the stainless steel coating provides corrosion protection, flexibilty and edge retention. The special feature of this series is the mirror-finished 32 layer damascus blade that turns each Kaji into a visual highlight. The riveted handle is of fine laminated Pakka wood that is comfortable to use by both left and right handed users because of its symmetric form.
