Kai Shun Chefs Knife Hollow Ground (DM-0747)
The Kai Shun Japanese Hollow Ground Chef’s Knife has a 6.0”/15cm blade and a 11.2cm handle and is ideal for slicing, dicing and chopping.
This knife is made up of 32 layers of damask stainless steel which gives the unique and beautiful Damascus effect and has an inner layer of V-gold-10 steel. The steel is made up of 1.0% carbon, 1.5% cobalt and 61 ± 1 HRC, and so is exceptionally hard and highly resistant to corrosion.
All Kai Shun Japanese Knives have a ‘chestnut’ shaped handle which has been ergonomically designed to fit comfortably in your hand. The handles are made from fine laminated Pakka wood and has a full tang construction.
