Kai Shun Japanese Lachsmesser Knife (DM-0745)
The Kai Shun Japanese Lachsmesser Knife is a superb slicer, ideal for ham and smoked salmon, its hollow ground blade resists the slices sticking to it. It has a blade of 30cm with a handle of 12.2cm
This knife is made up of 32 layers of damask stainless steel which gives the unique and beautiful Damascus effect and has an inner layer of V-gold-10 steel. The steel is made up of 1.0% carbon, 1.5% cobalt and 61 ± 1 HRC, and so is exceptionally hard and highly resistant to corrosion.
All Kai Shun Japanese Knives have a ‘chestnut’ shaped handle which has been ergonomically designed to fit comfortably in your hand. The handles are made from fine laminated Pakka wood and has a full tang construction.
