The Kai Shun Japanese Knife Set consists of a 15cm Utility knife (DM-0701) and a 20cm Chef’s knife (DM-0706).
The Kai Shun Japanese Knife range is possibly the largest range of Japanese knives available in the UK. Kai Shun Professional knives are made from a recently developed damascus steel with 32 layers. The innermost layer is made from V-Gold-10 steel. Containing 1% carbon and 1.5% cobalt, this steel has high corrosion resistant properties and will be capable of maintaining a long-lasting high degree of sharpness.
