Tojiro Senkou Knives are named from the Japanese word Senkou – which means “flash”, this word is linked to light and inspriration. The look of Tojiro Senkou knives is aesthetically pleasing by using the Damascus method of manufacture.
Tojiro Senkou Knives have up to 63 layers of steel folded and forged into their construction. This imparts a superb finish and appearance to Tojiro Senkou knives with their shimmering appearance. The beautiful patterned appearance of these knives is termed Kasumi-Nagashi in Japanese, which means “Floating Mist”.
Heston Blumenthal, famous for his restaurant The Fat Duck, in Bray, recommends Tojiro Knives, and kitted out his kitchens with them.
Tojiro Senkou knives have a superbly hard cutting edge (Rockwell 60-62 degrees). The laminating effect of the Damascus method of construction provides outer layers of softer steel to surround the extremely hard core, making them easier to sharpen and also more flexible in use.
To sharpen Tojiro knives a ceramic sharpener may be used, for professional results we recommend using a whetstone.
